It's not nearly as strict as 'hard trinity' games where for example only 1 or 2 classes can heal, they can only be healers and you will not survive without at least 1 of them, but my understanding is raids are designed to require a variety of professions - you probably couldn't complete them with all warriors or all mesmers for example.
Crafting skills can't be unlearned or removed. You can only change which Crafting skills are active on a character. However, I might have a suggestion to help sort out who the main crafters are, and who your extras are. The Character Selection screen shows icons of only the active Crafting skills on a character's portrait. Using this knowledge

This game offers a lot of flexibility in how you do things, even in the most difficult content, so it's pretty rare that there's only one profession which is acceptable (and even then it's not the only one that can do the job, just the current 'flavour of the month').
604. Posted September 28, 2022. For a very long time, it was engineer or revenant that was played much less than the rest of the classes. Engineer most likely due to flavor and playstyle, and Rev because you needed to buy heart of thorns. Now that mechanist is a thing, I highly doubt engineer is the least played.
